Food & Wine named Wrede one of America's 10 Best New Chefs in 2000. His restaurant, Joseph's Table opened in Ranchos de Taos, NM in 1995 and relocated to La Fonda Hotel in Taos, NM in 2004, is one of only seven AAA Four Diamond Award winners in New Mexico. And for the last three years the taste wizard has won the Distinguished Restaurants of North America's Award of Excellence. Before moving to Taos, Wrede an Arizona native, graduated from The Institute of Culinary Education in Culinary Arts, worked with Sean Kelly at his Denver restaurant Kelly's Aubergine Cafe, and with Pat Perry at Highland's Garden Cafe.

Wrede recently participated at the James Beard Foundation in New York, NY for the Great Regional Chefs of America event and had this to add, [My motto is] "The world is our country, cooking good food our religion, wild and organic our mission," says Wrede also known as "Jochef". He has made his restaurant in Taos, as much of a destination as the ski town to where it's located. Known for his surprising flavor combinations and whimsical yet grounded approach to cooking, Wrede is a pioneer of fine dining in the Southwest.
